Almost certainly, one of the first questions that comes to mind is: “Why pale?”. Responding to the curiosity are the owners of the Piccolo Teatro restaurant, where on Wednesday 30 November a show will be staged featuring the White Truffle, in courses with a complex yet well-orchestrated structure.
“We wanted to distinguish this new format from existing themed events and by playing with words we tried to associate what was once recognized as «elitist pallor» (or noble) with the color of the prized Tuber Magnatum. The combination between the two seemed nice and delicate at the same time, the kind that raises eyebrows for a moment.”
The direction is directed by Chef Maurizio Coccia, who has made experimentation and food alchemy one of his strong points over the years, without ever losing his taste for the simplicity of the local culinary tradition.
“Just think that in order to pursue the freshness of the raw materials without any exceptions, every day we have a «script» made up of dishes that are different from the previous day.”
“This has led to several changes in organizational strategy also in the dining room – comments Giulia, the owner and maître – where we have moved the tables to a single shift, to allow for a more relaxed and peaceful tasting. Like in a small culinary SPA, where you can relax your soul and palate.”
The concept of the event could be contained in the phrase “Less is more” (Less is more), coined by the famous architect Ludwig Mies van der Rohe, who through the skilful art of removing managed to bring each project to its essence.
Thus, from the combination of a few selected ingredients, each dish was designed with the ultimate aim of enhancing the notes and aromas of the prized tuber. Each course will feature copious cascades of lamellar white, supplied by Annarita Angellozzi’s Tartufo del Poggio company.
The final act then bears the signature of the old owner of the restaurant Luca De Cesaris, who with the spirits and bitters of his new Ngricca project is now launched towards new goals.
