Fresh Autumn Truffle (tuber uncinatum Chatin) is also known as ‘Autumn Scorzone’ in Italian language: though similar in appearance to a summer truffle, it ripens only at low temperatures.
Its pleasantly sharp flavour recalls that of Porcini mushrooms, Hazelnuts and Grana cheese.
Its gleba (flesh) ranges from hazel to dark brown with whitish veins. Its peridium (skin) is black and slightly warty.
The peridium (external rind) is warty, black in color, with poorly developed warts.
