White truffle - Tartufo del Poggio

White Truffle

In Marche region, White Truffle ( Tuber Magnatum Pico ) is harvested from the last Sunday of September to 31st December and is the finest and most valuable truffle variety. It is characterized by an intense and unique aroma. Its shape can be round or irregular depending on the soil where it grows. The peridium (skin) is smooth, ochre or olive yellow and the gleba (flesh) is hazel brown with whitish veins.

Winter Black Truffle

In Marche region, Winter Black Truffle ( Tuber Melanosporum Vitt. ) is harvested from 1st December to 15th March. Its shape, which depends on the soil where it grows, is mostly roundish but, occasionally, it can be irregular. The peridium (skin) is black in ripe truffles and wine-red in unripe ones and is covered with pyramidal warts with downward apex, while the gleba (flesh) is black with violet shades and whitish veins. Its aroma is pleasantly fragrant.

Autumn Truffle

In Marche region, Autumn Truffle ( Tuber Uncinatum Chatin ), also known as ‘autumn scorzone’ in Italian language, is harvested from the last Sunday of September to 31st December and it looks very similar to the summer truffle. Its peridium (skin) is black while its gleba (flesh) is dark hazel brown with whitish veins. Its aroma is stronger and more intense than the summer truffle’s.

Summer Truffle

In Marche Region, Summer Truffle ( Tuber Aestivum Vitt. ), also known as ‘scorzone’ in Italian language, is harvested from 1st June to 31st August and from 1st October to 31st December. Its peridium (skin) is black with rather prominent pyramidal warts while the gleba (flesh) is hazel brown with whitish veins. Its delicate and pleasant aroma make it the most versatile truffle variety in the kitchen.

Truffle: what it is and how it is harvested

Truffle is a hypogeous fungus, a mushroom that grows underground and that belongs to the Tuber genus. Truffles live in symbiosis with the root system of some trees, such as downy oaks, holm oaks, hornbeams, poplars, willows, hazels, pines, cistuses, turkey oaks, beeches etc.

A truffle consists of 80% of water and 20% of fibres, proteins, lipids and mineral salts.
The truffle’s fruiting body, called sporocarp, consists of an outer skin called peridium, which can be yellow ochre, olive yellow, brown or black. Its surface can be smooth or warty. The inner flesh of a truffle is called gleba and is characterized by a network of light-coloured veins that create a unique marbling effect. The colour of gleba varies depending on variety.

Truffle hunting and harvesting couldn’t happen without the help of man’s best friend. Thanks to their incredible sense of smell and hard work, dogs are excellent at truffle hunting. An activity that is more fun than a proper job for them and in return for which they receive an extra cuddle or their favourite treat. The cornerstone of truffle hunting is the strong and everlasting bond between the dog and its owner and their constant communication through glances and nods. Zenobio, a fifth-generation truffle hunter, has spent most of his life close to his four-legged friends on humid mornings, freezing nights, sharing fears, hopes and successes. All in the name of their love for a job that has now become Zenobio’s greatest passion.
